Mix Wet IngredientsIn a large bowl, beat together the granulated sugar, vegetable oil, and eggs until smooth. Then add the ube halaya, ube extract (if using), and vanilla extract. Mix until fully blended and vibrantly purple. Combine Wet & DryGradually add the dry mixture into the wet mixture, stirring just until combined. The dough should be soft and slightly sticky. Chill the DoughCover the bowl with plastic wrap and refrigerate for at least 1 hour to firm up the dough. Shape & CoatUsing a cookie scoop or spoon, scoop tablespoon-sized portions of dough and roll into balls. Generously coat each ball in powdered sugar.
